Trial Tuesday on a Wednesday...

Okay, okay so I know it isn't Tuesday but I have a recipe that I just have to share with you! Now, one of the things I remember about my grandmother is that she used to make meatloaf fairly often. "Would you like to try some dear?" To which I would kindly answer, "No way jose!" Never was a fan as a kid. However, I found a recipe from the Comfort Food cookbook I previously posted about and just had to try it. Yes, I am a sucker when it comes to cookbook pictures. If it looks yummy, I'm going to try it.

FYI: This recipe feeds several so invite your friends and/or family over to be your taste testers!

Gonzales Meat Loaf
Prep: 15 minutes/Bake: 1 hour and 10 minutes/Stand: 10 minutes

Ingredients:
2 pounds ground sirloin
3 large eggs, slightly beaten
1 cup fine, dry breadcrumbs
4 garlic cloves, minced
1 medium-sized red onion, chopped
2 plum tomatoes, seeded and chopped
1 1/2 cups shredded Monterey Jack cheese
1/4 to 1/2 cup firmly packed brown sugar
1/2 cup chopped fresh cilantro
1/4 cup Worcestershire sauce
2 tablespoons hot sauce
2 teaspoons salt
1 teaspoon pepper

Preheat oven to 350 degrees. Combine all ingredients. Shape into a free form 9 x 5-inch loaf, and place on a lightly greased rack in a broiler pan. Bake at 350 degrees for 45 minutes; increase oven temperature to 425 degrees, and bake 15 to 25 more minutes or until done. Let meat loaf stand 10 minutes before serving. Yield: 6 to 8 servings.

Delicious! I am kicking myself for not providing pictures with this post and promise to have them next time. If you try this recipe please let me know what you think. Now hopefully tomorrow I will be able to post a few wedding pictures!
